Incredible Peanut Butter Cookies
I’ve been trying to keep away from tempting foods but tis the season and the request to bring cookies to my daughter’s Christmas program was inevitable. All the parents had to. So while I was explaining this to my “diet buddy”, she said to make cookies I don’t like and avoid the cravings. Great idea!
Well, I’m not a peanut butter fan, and peanut butter cookies are no exception. So, while I tweaked this recipe, I did not eat them. But Hubby says they are INCREDIBLE and so did my MIL and a couple customers at her ice cream shop. I would have asked people who tried them at the “After Christmas Program Cookie Social” (I made that up. I don’t know what they called it.) but by the time we reached the plate, it was empty. All cookies had been scarfed.
If you like peanut butter cookies, then try this recipe and tell me what you think. Makes 24 cookies.
Preheat oven to 375°.
In one bowl mix:
1 1/4 c. Sifted Flour
3/4 tsp. Baking Soda
1/4 tsp. Salt
In another bowl mix:
1/2 c. Butter (use the real stuff)
1/2 c. Crunchy Peanut Butter (I used Super Crunchy)
1/2 c. Firmly Packed Brown Sugar
1/2 tsp. Vanilla extract
2/3 c. Peanut Butter Chips
Dump the flour mix into the other bowl and mix until well blended. Divide the dough into 24 balls. Roll each ball in white sugar and press onto cookie sheet with a fork. Bake for 9-11 minutes. Enjoy them warm with milk!
