I’m not much of a fish eater. As a matter of fact, I don’t like any seafood except for clams. Believe me, I’ve tried just about everything but it’s a texture thing for me. Well Hubby loves seafood and every once in a while wants fish for dinner. Tilapia is about the only least fishy fish that has a texture I can handle. Usually I make it with a parmesan crust that’s absolutely delicious. I’ve just grown tired of it. Time to try something new.
Any time I need a new recipe, I go to Recipe Zaar. I do my search for whatever I want to make and then filter it by rating. I’ve come across some amazing meals this way, and this one is no exception. From Julie Cioffi comes this awesome recipe for tilapia. It’s quick and simple, just the way I like it!
- 2 tilapia fillets
- 1 teaspoon dried oregano
- 2 teaspoons chili powder
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon salt
- 2 tablespoons butter
- 3 tablespoons lemon juice
Combine oregano, chili powder, cayenne pepper, and salt.
In a shallow bowl combine the melted butter and lemon juice.
Dip fish into butter mixture,then press into the spice mixture.
Place in a shallow casserole sprayed with non-stick cooking spray.
Bake at 450 degrees for about 15 minutes, or until fish flakes when pressed.
