Original Domestic Diva

So I went to the store looking for something to make dinner with, and as usual, I had drawn a blank. But instead of circling the store a few dozen times, I just started grabbing things that looked good. Before I knew it, I had all kinds of yummies and only a vague idea of what I was going to do with it. As it turns out, Hubby loved it so much that he said I could make it any time I wanted to, any day, every day. Since he is Polish and Italian, he named the dish Poliwop Jambalaya. I wish I would’ve taken a picture, but you will have to make it and send me a picture, k? Here goes…

Poliwop Jambalaya

Preheat oven to 350°

Ingredients:

1 zuchinni, sliced

1 yellow squash, sliced

1 small onion, coarsely chopped

1/2 red bell pepper, coarsely chopped

1 Polska Kielbasa, sliced and browned

1 jar spaghetti sauce

1/2 tsp (or to taste) Cayenne pepper

2 cups shredded mozzarella

8-16 oz macaroni noodles

Directions:

  1. Mix everything except the mozzarella and noodles, and place into a 9″ x 13″ and bake for 40 minutes.
  2. 30 minutes into baking, start cooking your macaroni noodles
  3. Sprinkle cheese over baked veggies
  4. Bake for 5-10 minutes more to melt/brown cheese
  5. Drain noodles
  6. Serve Polywop Jambalaya over noodles

Alteration: Add uncooked noodles with the uncooked veggies, etc and bake all together.
