Cheesy Italian Tortellini (Slow Cooker)

Here’s a super easy slow cooker recipe for Cheesy Italian Tortellini, that’s right I said “Slow Cooker”. Take a look…

Ingredients:

  • 1/2 pound ground beef  recipe
  • 1/2 pound Italian sausage, casings removed
  • 1 (16 ounce) jar marinara sauce
  • 1 (4.5 ounce) can sliced mushrooms
  • 1 (14.5 ounce) can Italian-style diced tomatoes, undrained
  • 1 (9 ounce) package refrigerated or fresh cheese tortellini
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded Cheddar cheese

Directions:

  1. Crumble the ground beef and Italian sausage into a large skillet. Cook over medium-high heat until browned. Drain.
  2. Combine the ground meats, marinara sauce, mushrooms, and tomatoes in a slow cooker. Cover, and cook on LOW heat for 7 to 8 hours.
  3. Stir in the tortellini, and sprinkle the mozzarella and cheddar cheese over the top. Cover and cook for 15 more minutes on LOW, or until the tortellini is tender.

Slow Cooker Creamed Corn (Yes!)

This one is truly delicious and super-easy!

Slow Cooker Creamed Corn

Ingredients:

  • 1 1/4 (16 ounce) packages frozen corn kernels  corn
  • 1 (8 ounce) package cream cheese
  • 1/2 cup butter
  •  1/2 cup milk
  • 1 tablespoon white sugar
  • salt and pepper to taste

Directions:

  1. In a slow cooker, combine corn, cream cheese, butter, milk, and sugar. Season with salt and pepper to taste.
  2. Cook on High for 2 to 4 hours, or on Low for 4 to 6 hours.

Slow Cooker Buffalo Chicken Sandwiches

This recipe is so easy, you just have to love your slow cooker! Not only is it no-hassle but it’s delicious…

Ingredients:

  • 4 skinless, boneless chicken breast halves  slow buff chic
  • 1 (17.5 fluid ounce) bottle buffalo wing sauce, divided
  • 1/2 (1 ounce) package dry ranch salad dressing mix
  • 2 tablespoons butter
  • 6 hoagie rolls, split lengthwise

Directions:

  1. Place the chicken breasts into a slow cooker, and pour in 3/4 of the wing sauce and the ranch dressing mix. Cover, and cook on Low for 6 to 7 hours.
  2. Once the chicken has cooked, add the butter, and shred the meat finely with two forks. Pile the meat onto the hoagie rolls, and splash with the remaining buffalo wing sauce to serve.

Chicken Chile Spaghetti (Warm Up With This)

This is comfort food that will warm you up and keep you satisfied…

Chicken Chile Spaghetti

Ingredients:

  • 1 (2 to 3 pound) whole chicken
  • 12 ounces vermicelli pasta  spag
  • 3/4 cup butter
  • 4 stalks celery, chopped
  • 1 clove garlic, minced
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 2 (10 ounce) cans diced tomatoes with green chile peppers
  • 1 pound processed cheese, cubed
  • 2 (4.5 ounce) cans sliced mushrooms

Directions:

  1. Place whole chicken in large pot or Dutch oven and cover with water. Bring to a boil, reduce heat, and simmer 40 to 60 minutes, until tender. Remove chicken from pot, reserving broth. Skin and bone chicken; set meat aside.
  2. Preheat oven to 350 degrees F (175 degrees C). (For slow cooker instructions, see Cook’s Note.)
  3. Bring chicken broth to a boil. Stir in pasta and cook 8 to 10 minutes, until al dente. Remove pasta from pot and set aside.
  4. In a large skillet over medium heat, melt butter. Cook celery, garlic, onion and bell pepper in butter until tender. Toss celery mixture with pasta, diced tomatoes and green chiles, processed cheese, sliced mushrooms and chicken meat. Place in 9×13 inch baking dish. Pour reserved chicken broth over to moisten.
  5. Bake in preheated oven 20 minutes, until hot and bubbly.

Here at the Belt Factory we’re all about yummy food that can easily be prepared while we’re at work making the coolest toddler belts in the world (our opinion, we might be a bit biased).

Easy Crock Pot Chicken Doritos Casserole (Kids Love It)

Prep time - 15 minsChicken-Doritos-Casserole1

Cook time - 8 hours 30 mins

Total time - 8 hours 45 mins

Ingredients:

  • 2 lbs boneless, skinless chicken breast or thighs
  • 1 28 oz can enchilada sauce
  • 1 15 oz can black beans, drained and rinsed
  • 1 15 oz can whole kernel corn, drained
  • 8 oz shredded Mexican blend cheese (divided)
  • 1 cup sour cream (more for serving)
  • 1 11 oz bag Nacho Cheese Doritos
  • 2.5 oz can sliced olives

Instructions:

  1. Add chicken to slow cooker and top with enchilada sauce.
  2. Cover and cook on low 8 hours.
  3. Shred chicken in slow cooker, and add black beans and corn.
  4. Stir in half the cheese and one cup sour cream, stirring until combined.
  5. Crush the Doritos, and add all but one cup to the slow cooker mixture.
  6. Top with the remaining cheese, olives, and then the chips.
  7. Cover and cook on high about 30 minutes longer, or until the cheese has melted.
  8. Serve with sour cream, shredded lettuce, diced fresh tomatoes, hot sauce, or whatever condiments light your fire.
