Barbecue Turkey Meatballs (Delicious)

Barbecue Turkey Meatballs 

Ingredients:

  • 1 egg, lightly beaten   turkey meatballs
  • 1 (5.3 ounce) container VOSKOS(R) Nonfat Honey Greek Yogurt
  • 1 cup soft bread crumbs
  • 2 tablespoons finely chopped onion
  • 1 teaspoon Italian seasoning blend
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 1/2 pounds ground turkey
  • Pretzel sticks
  • Marmalade Barbecue Sauce:
  • 1 cup bottled barbecue sauce
  • 1/4 cup orange marmalade or apricot preserves

Directions:

  1. Preheat oven to 350 degrees F. Combine egg, yogurt, bread crumbs, onion, Italian seasoning, salt, and pepper in a large bowl. Add ground turkey; mix well.
  2. Shape turkey mixture into 1-inch meatballs. Place meatballs in a foil-lined 15x10x1-inch baking pan. Bake about 20 minutes or until meatballs are no longer pink. Drain on paper towels. Add meatballs to warm Marmalade Barbecue Sauce (see below) in a large saucepan. Serve with pretzel sticks as picks.
  3. Marmalade Barbecue Sauce: Combine barbecue sauce and marmalade in a large saucepan; bring to boiling. Reduce heat and simmer 5 minutes. Serve with meatballs.

Oven-Roasted Chickpeas (Let the kids try these)

These little things are yummy and a great guilt-free, healthy movie snack!

Ingredients:

  • 3 (15 ounce) cans chickpeas, drained  chic
  • 6 tablespoons olive oil
  • 1 tablespoon salt, divided, or to taste
  • 2 teaspoons hot sauce
  • 2 teaspoons ground paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon ground cumin

Directions:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Combine drained chickpeas, olive oil, 2 teaspoons salt, hot sauce, paprika, garlic powder, chili powder, black pepper, and cumin in a large bowl. Spread evenly over 2 baking sheets.
  • Bake in the center of the preheated oven, stirring every 10 to 15 minutes, until chickpeas are golden and look dry on the outside, about 45 minutes. Remove from oven and sprinkle with remaining 1 teaspoon salt. Let cool before serving, 5 to 10 minutes.

Ingredients:

    • 1 pie crust clean-eating-pizza-pie-v-3
    • 1 cup shredded zucchini
    • 1 cup sliced mushrooms
    • 1/2 cup finely chopped, yellow onion
    • 1 tbsp. Italian seasoning
    • 2 tsp. garlic powder
    • 1 tsp. onion powder
    • 1 cup hand-grated cheddar cheese (pre-shredded is not clean)
    • 1 cup clean marinara

Plum and Raisin Chicken – (Fall Recipe)

This Plum and Raisin Chicken recipe is another that I’ve found that is delicious and clean eating!

(Makes approximately 9 1/2 cups)

Ingredients: plum-raisin-chicken-v-1

  • 4 raw, boneless, skinless chicken breasts (about 8 oz. each)
  • 2 large plums, sliced thin
  • 1 cup golden raisins
  • 1 (28 ounce) can diced tomatoes
  • 1 (15 ounce) can light coconut milk
  • 1 teaspoon curry powder
  • Salt to taste
