Watermelon Cookies – Perfect Summer Treat!

With Summer in Full (and extremely Hot) swing, I thought these cookies would be a nice treat to make for or with the kiddos. They’re not only fun and easy to make, but delicious too. Let’s get started…

Ingredients Needed:    Watermelon-Cookies_thumb

    • 1 roll store bought sugar cookie dough
    • 1 can of Hot Pink Icing
    • Mini-Chocolate Chips
    • Green Food Coloring

  1. Start off by opening your cookie dough, putting it in a bowl or on a cutting board and add about 10 drops of green food coloring. Knead with your hands and add more food coloring until it’s as green as you want it and thoroughly colored.
  2. Roll dough back into a log and refrigerate for about 20 minutes.
  3. Slice the cookie dough log into 1/4 inch slices and arrange on a parchment paper lined baking sheet.
  4. Bake according to package.
  5. Remove from oven before the edges brown. Let cool for about 10 minutes.
  6. Take a knife or spatula and slice some of the cookies in half while they are still warm to form wedges.
  7. Add pink icing and mini-chocolate chips for the seeds!
