Playgroup Granola Bars

Want to bring something different and delicious to playgroup? This is it!

Playgroup Granola Bars

Prep – 15 m       Cook – 35 m      Ready In - 50 m

Ingredients:

  • 2 cups rolled oats  granola bars
  • 3/4 cup packed brown sugar
  • 1/2 cup wheat germ
  • 3/4 teaspoon ground cinnamon
  • 1 cup all-purpose flour
  • 3/4 cup raisins (optional)
  • 3/4 teaspoon salt
  • 1/2 cup honey
  • 1 egg, beaten
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract

Directions:

  1. Preheat the oven to 350 degrees F (175 degrees C). Generously grease a 9×13 inch baking pan.
  2. In a large bowl, mix together the oats, brown sugar, wheat germ, cinnamon, flour, raisins and salt. Make a well in the center, and pour in the honey, egg, oil and vanilla. Mix well using your hands. Pat the mixture evenly into the prepared pan.
  3. Bake for 30 to 35 minutes in the preheated oven, until the bars begin to turn golden at the edges. Cool for 5 minutes, then cut into bars while still warm. Do not allow the bars to cool completely before cutting, or they will be too hard to cut.

Parmesan Cheese Puffs! (Delicious & Easy)

Okay, okay, these are too easy and only 3 ingredients!

Parmesan Cheese Puffs

Ingredients: parm

  • 2 egg whites
  • 1 cup grated Parmesan cheese
  • 5 cups oil for deep frying

Directions:

  1. Directions
  2. Heat oil in a heavy pot or deep-fryer to 375 degrees F (190 degrees C).
  3. In a medium glass or metal bowl, whip egg whites until they just hold a stiff peak. Fold in Parmesan cheese until evenly distributed. Form level teaspoons of batter into balls.
  4. Fry balls a few at a time, turning once until crisp and golden. Using a slotted spoon, remove puffs from oil and place onto paper towels to drain.

Broccoli and Cheddar Nuggets (Kid Friendly)

These Broccoli and cheddar nuggets are such a great way to get small children to eat their veggies!

Ingredients:

  • 1 teaspoon vegetable oil, or as needed broc tot
  • 1 (16 ounce) package frozen chopped broccoli, thawed
  • 1 cup bread crumbs
  • 1 1/2 cups shredded Cheddar cheese
  • 3 eggs
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon garlic powder

Directions:

  1. Preheat oven to 375 degrees F (190 degrees C). Grease a baking sheet with oil.
  2. Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil; add broccoli, cover, and steam until tender, 2 to 6 minutes. Let broccoli cool at room temperature until cool enough to touch.
  3. Transfer broccoli into a large mixing bowl. Add bread crumbs, Cheddar cheese, eggs, basil, oregano, and garlic powder to the broccoli; mix. Shape into nuggets or fun shapes and arrange onto the prepared baking sheet.
  4. Bake in preheated for 15 minutes, flip, and continue baking until heated through and beginning to firm, 10 to 15 minutes more.

Slow Cooker Taco Soup Recipe

Here’s an easy, delicious and healthy recipe we could all use.

Ingredients:

taco-soup

  • 1 lb. ground turkey
  • 1-2 tbsp. oil
  • 1 cup diced tomatoes in juice (canned or fresh)
  • 4 cups beef or chicken broth ( I used beef)
  • 1 tbsp. garlic powder
  • 1 tbsp. onion powder
  • 2 tbsp. ground cumin
  • 1 tbsp. chili powder

Optional Toppings:

  • 1-2 cups corn (frozen is fine)
  • 1/2 cup favorite, clean salsa (watch the sodium!)
  • Chopped fresh cilantro
  • Chopped, fresh avocado
  • Chopped fresh onions
  • Grated cheese
  • Sliced black olives
